Recipe: Hazelnut Macarons with Chocolate Nutella Ganache

Learnt many lessons from today’s baking session…

1) Do not modify recipes unless you are a pro. If you are a noob like me, stick to the recipe to a T!
2) Do not add extra eggs or extra ingredients when delicate stuff like macaron shells are involved or the whole consistency will change
3) Oven is very very important! Use one with a ‘fan’ mode or the baking will end up uneven with the outer part burnt and the inner part still gooey and not cooked
4) Electronic scale is preferable!!
5) Adding extra Nutella to ganache always makes it so much yummier ;)

The ingredients…

Add the icing sugar, hazelnuts and milo powder into the processor

Add the fine processed mixture to whisked egg whites and caster sugar and fold

Pipe it onto the baking tray and put it into the oven for 10 min..

Round 1- Not so successful :( Burnt and cracked shells due to temperature issues

Round 2 which was heaps more successful :)

Start on the ganache- thickened cream, dark chocolate, nutella and butter. Pop the mixture into the fridge to harden

Pipe it onto the cooled down shells from the oven…

Not so nice macarons from the first round..

Round 2 without the added milo powder and extra egg! :D

Adelaide Eats: Belgian Beer Cafe Oostende

This Belgian cafe is known for two things. 1) Beer 2) Mussels. But I am sorry to say that I have not tried either because I am not a fan of them. But if you are, you should try it because heaps of people come here specially for the beer and the one kilo of Mussels served in a traditional Belgian Mussel Pot, Served w’ Pommes Frites & House Made Creamy Mayonnaise! :)

Anyhow these were the two mains we ordered!

Entrecôte de Porc
Char-Grilled Pork Rib Eye w’ Apple, Carrot, Turkish Fig & Red Cabbage Slaw w’ Char Grilled Chorizo

A tad too salty and dry for my liking..was not a big fan of the coleslaw either :(

Ratatouille aux Champignons
Fetta Filled Mushrooms, w’ Eggplant, Zucchini, Red Peppers & Pumpkin Ratatouille

Very unique dish especially if you love fetta and mushrooms. Loved how all the flavours tied together and the best part is that it’s a vegan dish! Very yummy one indeed :)

Every main on the menu comes with a recommended beer to order alongside and I wish I ordered a pint so that I could review it but I am really not a fan of beer so I would not be the best person to judge it. Nevertheless, sit outside especially in the cool evenings and enjoy people watching. It’s therapeutic.

Belgian Beer Cafe Oostende on Urbanspoon

Skinny Pizza, Linguine, Truffle Fries & Cake

This is a compilation of two visits to Barracks House Cafe because I went there twice in a day! Once for brunch, went home to digest for a bit and came back in the late afternoon for dessert again. That was how much I enjoyed this place :)

SMOKED TURKEY SWISS
Smoked turkey ham, emmental cheese, served with blueberry compote, rocket and cracked black pepper

SQUID INK (SQUID INK CRUST)
Calamari, prawns, fresh tomato salsa, red onion, chopped parsley with jet black squid ink crust

LOBSTER LINGUINE
Half lobster linguine with crab meat and prawn bolognese tossed in black pepper sauce. Topped with salmon caviar.

MOROCCAN SPICED BABY CHICKEN
Marinated spiced baby chicken with fresh tomato-berry chutney. Served with yam crisps, sauteed fennel and baby bok choy

TRUFFLE FRIES, SWEET POTATO NIBBLETS, BEEF SAUSAGE

Never get sick of truffle fries. Love how it looks so ordinary but the after taste is just woww. However the sweet potato nibblets were only nice for the first few ones..after that it was just too much :(

And…onto the sweeeeeet stuff!! :D

CHOCOLATE HAZELNUT GATEAUX
Brownie, chocolate sponge and hazelnut

Looked nicer than it tasted unfortunately :( Thought it was a tad too dry…

WARM STRAWBERRY SHORTCAKE

Poured over with Vanilla Bean Cream…

BITTER CHOCOLATE TART
Best dessert out of all! And I dont even like dark chocolate but this was oh so good :D

Strictly Pancakes

Pancakes are a very integral part of my life and I am in love with thick and fluffy pancakes :) So to find out that a cafe that specialises in just pancakes had opened in Singapore, I was psyched and I knew I had to try it! :D

Located at Prinsep Street, it was not very hard to find especially with the big signboard along the main road. Two of us got seats at the couches upstairs and got ready for what we had hoped to be a good meal…

LEMON CURD FOR THE NERDS
Chocolate Pancakes with deliciously Tangy Lemon Custard and Cream Accompanied with a Scoop of Vanilla ice Cream and Lemon Zest.

WHAT-A-SPREAD!
Medium Stack of Peanut Butter Pancakes layered with Nutella served complete with Kinder Bueno and a scoop of Vanilla Ice Cream

The verdict?

I was not sold.. Actually thought that the descriptions were heaps better than the pancakes themselves..Did not think that the pancakes were thick or fluffy enough. The mix of peanut butter with Nutella and Kinder Bueno was awesome even if the pancakes were not there.. The lemon custard was not bad but the chocolate pancakes were not chocolatey enough.. But I guess you could try the place if you have a pancakes craving, it’ll probably satisfy it..kinda? Anyhow the waitresses there are really nice and friendly while the second floor of the cafe is really cosy so it’s a good place for photos and to spend time with your girlfriends! :)

Riders Cafe at Bukit Timah Saddle Club

This is a way overdue post but I really wanted to blog about it because it was possibly one of my best meals back home with one of my favourite persons in the world. Throw in some nice weather with a slight breeze and a couple of horses trotting past as you have your brunch, you’ve struck gold :)

So the story was that we had come to Riders because we heard so much about their pancakes- how thick and fluffy they were, how yummy they were. So two pancake crazy best friends made a reservation and made their way there, only to find out that they had changed their menu :( SO NO MORE PANCAKES!! :( :( How can! Was immediately disappointed! However, the waiter was quick to point out that the pancakes have now been replaced with french toast and promised that it was equally good! He even offered to pay for it if I did not like it! But thankfully he didnt have to ;)

However, french toast can never replace the special place pancakes have in my heart :P

Banana Caramel Toffee Pie served with fresh cream

Absolutely cannot describe how rich and decadent this dish was. Whoever knew toffee and banana would be a perfect match?

Definitely need to call to make a reservation if you want a seat and try asking for the balcony seats! The view is nicer :)
