Recipe: Banana Cinnamon Oatmeal Sultana Walnut Cookies

Im sorry for the lack of updates. Uni has been really tiring and 3rd year is just both mentally and physically draining. Im inclined to think that it’s because Im growing old.. :( Anyway since it’s TGIF, what better way to spend the night than to do what makes me happy! So I was planning to bake banana bread or an upside down banana cake because Mable was sweet enough to leave 2 overripe bananas for me but Wanxian requested for Dark Chocolate Nutella Truffles so I decided to make a simple banana walnut cookie recipe instead and the truffles so I would not have too much to wash up! Hee and the best part was that I finished both recipes in 2 hrs so my housemates had truffles and cookies waiting for them by the time they reached home! :)

(Makes 9 huge cookies because I like BIG cookies! You can probably make more if you make mini ones)

  • Oat Flour – 1/2 cup
  • Rolled Oats – 1 cup
  • Baking Powder – 1/2 tsp
  • Baking Soda – 1/2 tsp
  • Cinnamon – 1/4 tsp
  • Mixed sunflower and pumpkin seeds – 1 tbsp
  • Maple syrup – 1/4 cup
  • Vanilla yoghurt – 1/4 cup
  • Vanilla Extract – 1/2 tsp
  • Olive Oil – 1 tbsp
  • Banana – 1 ripe (medium)
  • Sultanas – 1/2 cup
  • Walnuts – 1/4 cup

Preheat the oven to 180 degrees. Put all the ingredients into a large bowl and mix well.

Use a tablespoon to scoop out portions and put on a baking tray.

Pop the tray into the oven and bake for 10-15min! Remove tray from oven and cool :)

And these were the White Chocolate coated Dark Chocolate Nutella Truffles :)

  1. Those look and sound amazing. My husband, kids, and I eat very healthy so I love finding recipes especially including banana and cinnamon that have all ingredients that we actually eat! We will be making these soon!

Hmmm then you’ll definitely love these cookies. They smelled really good coming out of the oven and even better in the mouth :) You can try the carrot oatmeal muffins and oatmeal pancakes if you like as well! They pack a punch in taste but less on your tummy! ;) Im sure the kids will love it!
