Recipe: Chocolate Chip Coconut Cookie Cake

Im sorry I had no other name for this because I came up with the recipe myself..LOL! I just needed to use my leftover egg yolks and my new cake tin. I did however notice that every part of the name started with a ‘C’! =P

Ingredients:

2 1/2 cups of plain flour/oat flour/whole wheat flour
1 tsp Baking powder
1/2 tsp Salt
1 cup Shredded coconut
3 egg yolks + 1 egg
1 tbs Lemon juice
2 cups of Caster sugar
1/2 cup Olive oil/butter
Handful of Chocolate chips

Preheat oven to 180C. Mix the wet ingredients together and mix the dry ingredients together but in 2 separate mixing bowls. Slowly add the dry mixture to the wet one and mix throughly but do not over mix the batter. Either scoop out little balls and put on a baking tray as cookies or fill your cake tin with the mixture, sprinkle with chocolate chips and put it into the oven. Bake for 25-30min, remove from oven and allow to cool before cutting. The outer part should be crispy but inside moist :)
