Recipe: Fudgy Moist Chocolate Cake with Coconut Milk and My First Attempt at Frosting!

I bought 2 packets of coconut milk the last time I made the Pandan Chiffon Cake and because I knew no one would use the second packet when I go back to Adelaide, I scoured the internet for a coconut milk recipe that did not require me to buy any additional ingredients and I found this recipe! Plus there were no additives like nuts or dried fruits which was perfect for Xin because she likes plain old dark chocolate cake :) And I couldnt fly back without letting her try something I made because she has been asking why she never got to try anything. Whoops!

Ingredients for cake:

  • 1 cup of semi-sweet/dark chocolate chips
  • 3/4 cup unsweetened cocoa powder
  • 3/4 cup boiling water
  • 6 TBS butter, melted
  • 1 1/2 cups sugar
  • 2 large eggs
  • 1 cup coconut milk
  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt


  • Preheat oven to 180C.
  • Line bottom of 9″ pan with round of parchment paper, butter paper, and sides of pan.
  • In a bowl combine chocolate chips with hot water and cocoa powder. Let mixture stand, stirring occasionally, until chocolate is melted and mixture is smooth.
  • In a bowl add flour, baking soda, baking powder, and salt. In another large bowl, beat butter and sugar until combined. Add eggs (adding one at a time) until thickened slightly and light colored (about 3 minutes). Slowly add coconut milk, and melted chocolate mixture, beating until combined well. Add flour mixture and beat until just combined.
  • Pour batter into pan, and bake in middle of oven until a toothpick inserted in center comes out clean, 25-30 minutes.
  • Cool cake completely before frosting (VERY IMPT)

Frosting (Chocolate Coconut Buttercream):

  • 3/4 cup butter
  • 2/3 cup cocoa powder
  • 3 cups powdered sugar
  • 1/2c-3/4 cup coconut milk,
  • 1/2 tsp – 1tsp pure coconut extract (I left this out because I didnt have any)
  • Beat butter, cocoa, powdered sugar, and coconut extract, and add coconut milk a little at a time until you reach a consistency you like.

Xin’s forkful of cake straight from the container itself!

And it got Miss ‘Im crazy over dark chocolate’ ‘s stamp of approval! :)

Anyway she got me Royce WHITE chocolate as a farewell gift!

Just the way I like it! :) And that’s how different the two of us are even though we’re best friends and chocoholics! HAHA! I love my white chocolate and she loves it as dark and bitter as possible, even up to 70%! Madness…
