CNY ’14: Lunar New Year at Resorts World Sentosa (RWS)

Simply a work of art and stealing the show with its entrance, is this year’s Salmon and Mackerel ‘Lo Hei’ by Chef Li Kwok Kwong of Feng Shui Inn. One look at this centre piece and you know that it is all about the details. Taking the shape of a horse, with its mane and hoofs all included, this is by far one of the most endearing replicas we have seen of the Chinese zodiac animal.


Featuring fresh salmon cubes, crispy-skinned mackerel, silver fish and strips of bak gwa, the refreshing medley of contrasting textures takes on an even more interesting turn with a choice of either Italian balsamic vinegar or mint dressing.

For the vegetarians, a fruity variation of Mixed fruits and Water Chestnuts ‘Lo Hei’ is also available. And to keep up with the theme of unconventional, this one is dressed with a homemade Strawberry sauce.


Ala carte dishes or 8-course set menus starting from $1118++ for a table of 6 and up to $1688++ for a table of 10 are also offered for the festive period. This Sautéed Grouper Fillet with Fish Roe $58++ per portion definitely adds a touch of opulence to your table with its auspicious symbolism and premium quality.


I strongly recommend the Braised New Year 8 Treasures Pen Cai which features only superior grade ingredients of lobster meat, abalone, sea cucumber and scallops. The stock too was nicely thickened and thoroughly luxurious. Definitely a crowd-pleaser and a comforting one too.


Those with kids at the table or even business associates who wish to enliven the atmosphere and join in the spirit of celebration can order this mega up-sized golden ingot which has a fibrous casing that can be ‘smashed open’ by the wooden mallets provided to reveal 8 more mini ingots filled with pineapple paste.


Each giant golden ingot is sold at $88 each.

Forest will be offering two 5-course reunion set lunches priced from $68++ to $88++ per person and three 6-course set dinner menus priced from $178++ per person to $388++ per person during the festive period. All set menus includes a Salmon Fruit Vegetables Yu Sheng dressed in yuzu honey lime dressing for a citrusy finish.

From the set dinner menu, we had full praises for the Braised superlative Imperial Bird’s Nest with Crabmeat and Crab roe that was laced with luscious abalone sauce. Simply exquisite and ethereal, each spoonful charmed with its natural sweetness and delicate essence.


For something satisfying and filling, the Baked Japanese Pearl Rice with Seafood and Cheese Served in Young Coconut will do just the trick.


The rice grains were chewy and slightly sticky, with every bit thoroughly coated in creamy smooth melted cheese and simply brimming with prawns and crabmeat. The coconut husk added a nice overall rustic appeal.


Finish the meal with a superbly refreshing Chilled Coconut Jello with Aloe Vera and Black Pearls served in Young Coconut. Naturally therapeutic, light and enjoyable, with just a hint of lingering sweetness, this dessert is just what you need after such a rich and enjoyable meal.
