Ocean Restaurant by Cat Cora @ Resorts World Sentosa (RWS)

The first female Iron Chef and the lady behind Ocean Restaurant by Cat Cora, Chef Cat Cora was in town earlier this month to launch her brand new 4 course set lunch menu. As a strong champion of sustainable seafood, Chef Cora translates her food philosophy into dishes that are created from seafood sustainably sourced through aquaculture or controlled fishing. These signature creations can be found at her first Singaporean outpost, which boasts of a unique dining concept nestled in the world’s largest aquarium at Resorts World Sentosa (RWS) where guests can savour the magnificent experience of dining alongside more than 800 species of marine animals.

The 4-course Set Lunch menu which is available every day of the week comprises of a starter, 2 main courses and ends off with dessert. Preceding all these dishes was first an amuse bouche by Chef Cora featuring a 42°C sous-vide Salmon with Citrus Minestrone that was delicately light and smooth with some refreshing notes.


For the Starter course, diners had a choice between the Kingfish Tartare and White Onion Soup. The former was a beautiful rich bed of chopped Kingfish fillet served with Watermelon, Passionfruit and Tomatillo Ice, balancing out the oily texture of the fish while the latter was possibly one of the best onion soups I have had by far.


It was not a popular choice actually but once every one had a taste of that velvety smoothness and lovely contrast of sweet caramelized onions with the soft salty melted cheese, I think they wished they had picked this starter instead. Comforting, warm and filling, the crispy bread layer was possibly the crowning factor.


Moving on to the Seafood main course, we were given a choice between the Crispy Skin Barramundi and Pan Seared Glacier 51 Toothfish. The latter is a new item introduced by Chef Cora and is a native Western Australia fish that is usually found along the icy waters of the coast. Textually wise, it was thick and firm but strangely tender and beautifully smooth. Complimented by a light yuzu-soy reduction and finished with some mentaiko, crispy garlic and scallions, this one definitely had some oriental influence.


The Crispy Skin Barramundi on the other hand, was positively faultless as its mild flavoured white flaky flesh was accentuated by bits of air-dried parma ham floss and olive oil mashed potato.


For the Meat main course, choose between the Crispy Boneless Confit of Duck Leg served with Japanese Sweet Potato, Caramelized Hazelnut & Pomegranate Molasses or the Braised-Seared Beef Short Rib that is accompanied by King Oyster Mushroom and bathed in Soya with Black Truffle Vinaigrette.


I fancied the Crispy Boneless Confit of Duck Leg more, just because I have a weakness for duck confit and Chef Cora’s version did not disappoint one bit. The skin was crisp to perfection while the meat remained tender, rich and full of flavour. The Braised-Seared Beef Short Rib though, did not lose out very much either with its meltingly tender meat and black truffle finishes. It is a draw for this one.


There was no choice for Dessert but the Crémet D’anjou or rather cheese curd with fresh berries was rather light despite its creamy nature. Soft and a tad airy, this was a welcoming sweet end to our extremely satisfying set lunch.
