CNY ’16: Crystal Jade Culinary Concepts

With barely half a month left before the glorious celebration of the Lunar New Year, restaurants across Singapore have been whipping up new creations to put forth its finest dishes onto the dining table. For this year, the talented chefs from the various Crystal Jade Culinary Concepts have conjured up several festive delights to win the hearts (and ‘red packets’) of your family members! These Chinese New Year Set Menus and exclusive dishes will be available at the respective Crystal Jade restaurants from 25 January to 22 February 16.

Prosperity Yusheng with Abalone and Pomegranate | $88 Small, $138 Large

Starting off with their rendition of the quintessential Yusheng, this Prosperity Yusheng with Abalone and Pomegranate served in an auspicious large red plate, delivered waves of sweet and savoury notes in every bite. Featuring a neat stack of shredded greens topped with tender slices of Mexican abalone and coated with a dark fruity pomegranate infused plum dressing for that tangy finish, we thoroughly enjoyed how the added fruity crunch from the pomegranate seeds brought out the freshness of the oriental salad!

Chilled Asparagus $20

For something refreshing, this humble appetizer of Chilled Asparagus planted in a bowl of ice is a great choice. Thick, juicy with subtle earthy undertones, the natural sweetness of those crisp spears was brought out by the aromatic truffled-scented dipping sauce that accompanied it.

Luxurious Abalone Treasure Pot | $318 for 6 pax, $498 for 10 pax

We were next introduced to the Luxurious Abalone Treasure Pot. This exquisite peng cai was brimming with 15 different premium ingredients and some of which included the eight-head abalones, sea cucumbers, dried oysters, smoked pig trotters and fish maw that had been braised till tender in a lovely sauce with deep robust flavours. The result was no doubt a scrumptious pot of ravishing ingredients that did not disappoint our fussy taste buds. Unique to this peng cai also were the extra succulent pig trotters that added an element of richness to the overall dish.

Steamed Herbal Xiao Long Bao | $6 for 4 pieces
From Crystal Jade La Mian Xiao Long Bao

One of our favourites that evening, were the baskets of Steamed Herbal Xiao Long Bao sent straight to us from the steamer. These piping hot soup pouches enchanted us with its beautiful folds and desired thin skin consistency. Enclosed within the soft membrane was a juicy meat parcel soaked in a delectable herbal broth that exuded a delicate bitterness from the angelica root. Crowned with a ruby-red wolfberry for that touch of sweetness to mellow out the bitter broth, this was both comforting and satisfying.

Sautéed Scallop & Coral Mussel with XO Sauce $28

The last savoury item was the Sautéed Scallop & Coral Mussel with XO Sauce. This vibrantly-coloured dish of shellfish was so fragrant that we could smell it before it reached our table. Tossed and cooked in XO sauce, we were all very impressed with the fork tender scallops, as well as the crunchy coral mussels which retained a delightful chewy interior.

Steamed Pumpkin Glutinous Rice Ball with Bean Paste | $4.80 for 3 pieces

Ending off with desserts, the Steamed Pumpkin Glutinous Rice Ball with Bean Paste presented in the steamer baskets were simply adorable. Bite-sized pockets bursting with sweet red bean filling and a sprinkle of shredded coconut for added texture to the soft, elastic skin, this however would have been much more enjoyable if the skin was a tad thinner.
